4 pounds total seasoning meat such as ham, smoked sausage, Andouille, etc
1/4 cup leafy parsley to add just before serving
1 tablespoon black pepper
salt to taste (since the salt from the ham and/or sausage you use will vary the amount of additional salt needed)
Soak beans overnight and drain. Boil beans for 1/2 hour to 45 minutes then add seasoning and continue cooking. Add season meat and cook until beans are tender. Serve with hot rice.
