  • (6 to 8 serving)


  • RED BEANS AND RICE

  • 1 pound red kidney beans
  • 1/2 gallon water
  • 1 medium onion
  • 1 large bell pepper
  • 4 ribs celery, medium diced
  • 4 pounds total seasoning meat such as ham, smoked sausage, Andouille, etc
  • 1/4 cup leafy parsley to add just before serving
  • 1 tablespoon black pepper salt to taste (since the salt from the ham and/or sausage you use will vary the amount of additional salt needed)

  • Soak beans overnight and drain. Boil beans for 1/2 hour to 45 minutes then add seasoning and continue cooking. Add season meat and cook until beans are tender. Serve with hot rice.
